Oh yeah, leg is through the railing now...wonder if he is thinking about jumping? :) Look at that "bed head" hair... whew, needs to be cut... :) I know I am just his LaLa, but I could just kiss all over that face. :)

Ummm Pumpkin Roll...


I am in the mood for Fall...I made this yesterday...oh so good!

Libby's Pumpkin Roll- Easy...
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup LIBBY'S® 100% Pure Pumpkin
1 cup pecans chopped
Cream Cheese filling:
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar, sifted
6 tablespoons butter or margarine, softened
1 teaspoon vanilla extract
1/4 cup powdered sugar-when cooled.
PREHEAT oven to 375 degrees F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle towel with powdered sugar.
COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.
BAKE for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.
BEAT cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Re-roll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

Marvelous...

I am giving a wedding shower in a few weeks, (yes, Ms Corrie, for you)...and I have been surfing the net. Came across these cool, blue, pretty, meringue winter cupcakes. Not that I am going to bake them, but just love new ideas. It seems that cupcakes and cupcake wrappers are the "in" thing, and I guess you know by now that I love cupcakes. :)

Storm before the Calm...

Today's sermon at Green Acres Baptist, by Bro. David Dykes, was just for me. Just have to blog about it!


The saying, "The calm before the storm", should really be stated as "The Storm before the Calm". Think about that statement. We all have storms in our lives, and we are either:

  • going to be in a Storm
  • in a Storm
  • coming out of a Storm,
I feel like I am all three. :)
He made this statement which I hope I can remember, (and this is another reason why I blog. When I blog, I can come back to my "ponderments", and re-read them. I bet Jason is loving the word "ponderments").

I am reading my way through Deuteronomy right now, it is full of laws...omg, I am so glad we do not have to live by all of these laws now. This verse did strike me though.....I am HIS treasured possession. You know if I treasure something, I give great value to it and if I possess it, it is mine. I am so comforted by the fact that I am treasured and I belong to God.
