Lace Cookies....by Gina.....

This Recipe is from one of my "great" clients. She loves to bake....and I love her food. She is one of the best clients that knows how to "show" her house! I have her house listed now, and you can see it- just click on this link - Taylor's House

These are like the ones at Collin Street Bakery but not as (dark brown). I made these yesterday and put them on a pan in little round balls with my mini scoop and they spread out to a beautiful cookie that looked like a lace doily. crisp and delicious! Love ya! Gina

Lace Cookies

½ cup (1 stick) butter or margarine
1 cup sugar
1 egg
1 tsp vanilla
3 Tbs. all-purpose flour
½ tsp salt
1 cup quick-cooking oatmeal (not instant!)

Preheat the oven to 350 degrees F. Line cookie sheets with aluminum foil, parchment paper, or nonstick baking mats.

Using an electric mixer at low speed, cream the butter and sugar until thoroughly combined. Add the egg and vanilla and mix well. Stir in the flour, salt, and oatmeal, mixing well with a spoon. Drop by teaspoonfuls 2 inches apart onto the prepared cookie sheets. Bake for 5-8 min, until lightly browned. Let cool completely before removing from the sheets; peel cookies away from the lining. Makes 2 ½ dozen
